Leftover lunch: Tri-Tip

Having Tri-Tip leftovers is great no matter what you do with them…I never had tri-tip before moving out West and the moment I did, it was love. We usually buy a pre-marinated tri-tip which costs $20 so obviously, it’s not something you cook on the regular.

This weekend I decided to make a tri-tip sandwich with the leftovers slices for both of us since we were working hard on DIY projects. I tried using what I had around the kitchen but I did buy some fresh ciabatta rolls. Instead of microwaving the meat, I sauteed the tri-tips with a bit of olive oil.

I added some shredded mozzarella cheese and some crispy fried onions to it. I rested the tri-tips on the cheese so it would melt…as you can see from the photo, it was not yet melted. I think next time, I’ll just add a cheese slice on top of the meat while it’s still cooking to get it adequately melted and maybe add some sauteed onions…do a sort of cheese steak sandwich. Maybe I’ll even add some sauteed mushrooms as well…God, I love mushrooms!!!!
